“Soul Shriven” Pancakes

Makes 14-16 pancakes
260g flour
2 eggs
75ml boiling water
1/2 litre of full fat milk
Large knob of unsalted butter
1 tablespoon of honey/maple syrup
Pinch of salt
This is not an ESO in-game dish but a recipe inspired by my grandfather back in Prague - perfect for celebrating Mardi Gras (also known as Shrove Tuesday - hence the Soul Shriven connection). He always made the BEST pancakes, and after he died I spent years trying to replicate them! He liked to fill them with butter + cocoa, but you can also use jam, sugar + lemon or whatever you like.
Rest the batter for at least 20 minutes to give the gluten time to develop, making your pancakes light and fluffy. The addition of boiling water also heats up the proteins for a sturdier batter, so it’s easier to make really thin pancakes without tearing them.
Melt the butter in a small pan.
Add the dried ingredients to a bowl.
Make a well in the middle and add the eggs, honey and 1 tablespoon of the melted butter along with the boiling water, and combine.
Start by whisking from the middle, gradually incorporating the flour.
Keep whisking vigorously until you have a homogenous mixture (a few little lumps do not matter), but avoid overworking the batter as this can make your pancakes tough.
Rest for at least 20 minutes, up to 2 hours.
Preheat a suitable pan to medium heat and brush lightly with the melted butter.
Add a ladleful of the pancake batter and swirl the pan (or use a crepe spreader) to distribute it evenly.
Fry until it starts to turn golden brown on the underside (a couple of minutes should do it), then carefully flip it for another minute on the other side.
Keep warm while you make the rest. Enjoy!
